Let's start with North Carolina...it's all about the pork baby. The primary ingredients in the sauce are vinegar and hot peppers. You will often hear about people calling sauce here dip. It has thin and not so sweet taste. If you ever make it to North Carolina try to plan a trip to the Lexington Barbecue Festival.
South Carolina also features pork, but you tend to see a wider variety of sauces. These include tomato, vinegar and mustard based sauces. While you might not have tried the mustard bbq sauces, they sometimes refer to them in South Carolina as Carolina Gold. Aside from that, when eating barbecue in South Carolina, don't forget the tea!
