Our Story: Billy G's Carolina BBQ Sauces & Spices

I'm Bill Gause. I grew up in Forest Acres, and I've been feeding the Columbia, South Carolina area since 2004. Everything in these bottles started in a home kitchen, on a catering line and in a food truck, not in a lab.

Billy G's Carolina BBQ is an award-winning caterer and food truck in Columbia, SC. Readers of The State, South Carolina's largest newspaper, have voted us Gold Award winner for "Best BBQ" and "Best Food Truck" four years running. In 2023 we were invited to be the exclusive BBQ vendor at the South Carolina State Fair, the first time BBQ had been served there since the 1960s. Billy G's is the exclusive BBQ vendor for the University of South Carolina Football games at Williams Brice Stadium, Basketball games (and Concerts and Events) at Colonial Life Arena, and Baseball games at Founders Park.

My son, Will Gause, built our food truck operation from the ground up, and you'll find us at University of South Carolina athletic events, all of the local festivals, and as the exclusive food truck vendor at the #1 Biker Bar "Suck Bang Blow" in Murrells Inlet for the Spring and Fall Myrtle Beach Bike Weeks.

We smoke our meats low and slow, the way barbeque has been done in South Carolina for hundreds of years. We've catered wedding receptions, rehearsal dinners, corporate events, graduations, and reunions in Columbia and across the Midlands of South Carolina.

How the sauces got started

We've been making our own Carolina BBQ sauces and spice rub for the catering business since 2006. So many clients told us how much they liked them and said we ought to sell them to the public. That's how Billy G's Carolina BBQ Sauces & Spices got its start. Since 2019 you can find us in grocery stores and online.

It's the same Sweet Heat, Carolina Bold mustard sauce, and Old No. 21 Secret Spice rub we use on the pit, bottled for your kitchen.
